The Dowry set to open café/restaurant at Shetland Museum’s historic Hay’s Dock

Managing Director of The Dowry, Stuart Fox, has confirmed that he has today signed a lease with the Trust to initially operate a café and bar at Hay’s Dock during museum opening hours, with plans to extend this to evening meals in the near future.

Stuart Fox said: “I am delighted to announce that The Dowry is expanding and opening a second restaurant at the stunning Hay’s Dock location. This has been in the pipeline for a while now and we’re really pleased to see it all going ahead. The plan is to open on 1st May in time for the summer season.

“The new restaurant will be in addition to The Dowry on the street and we very much see the two sites complementing each other, whilst offering something slightly different. Hay’s Dock is a fantastic space and the team is really excited for the challenges ahead. We can’t wait to get in and start developing our ideas.”

Alison Moncrieff, Chair of the Shetland Amenity Trust added: “We are absolutely delighted to be working with Stuart Fox and the team at The Dowry. Reopening the Hay's Dock café area at this lovely location with its stunning views has been a priority for us. Whilst this has been a challenge over the past two years, now that we are seeing Covid restrictions easing the time is right and we're very much looking forward to this exciting new venture. The Dowry has an excellent reputation for serving wonderful food and drink, with an eye on local produce with a Scandi twist, which is a great fit and very much in keeping with Shetland's heritage. We are confident that the new café will be a fantastic boost to the museum’s Five Star offering. We can't wait for the start of the summer season and the café doors to be open again so we can welcome folk back.”

More details will follow in the coming months.
